Lime-Pineapple Marmalade1 grapefruit2 limes1 large pineappleApproximately 5 cups waterApproximately 5 cups granulated sugar2 tablespoons freshly-grated orange rindWash and remove the seeds of the limes and the grapefruit and dice or put them through a meat grinder. Pare, core and chop the pineapple. Measure all the fruit including the juice, and add 1 1/2 cups of water for each cup of fruit; let this stand overnight.The next morning, simmer the fruit and water, uncovered, over low heat until the fruit is tender, about 1 hour.Measure the mixture again and add the orange rind and 1 cup of sugar for each cup of pulp. Cook over medium heat until sugar has dissolved, stirring constantly. Then cook over high heat until your jelly thermometer reads 220 to 222 degrees F, or the syrup sheets (2 drops falling from the side of a spoon and forming 1 large drop). Ladle into hot, sterilized jars and seal immediately.To seal: Fill to within 1/2-inch head room, being sure to first wipe the rim and threads of the jars with a hot damp cloth to remove all particles of food, seeds or spices. While contents are hot, cover with a 1/8-inch layer of paraffin. When paraffin has set, add another layer of melted paraffin, tilting and rotating the jar to seal completely. CALCIUM CARBONATE ANTACID - CHEWABLE TABLETS
(KAL-see-um KAR-buh-nate)
COMMON BRAND NAME(S): Dicarbosil, Rolaids, Titralac, Tums
USES: This medication is an antacid used to relieve upset stomach, heartburn or gas caused by sotmach acid.
HOW TO USE: Take this by mouth as diercted. Chew thoroughly and swallow. Do not swallow the tablets wohle. Follow each dose with a full glass of water. Do not raise the dose or take this more often than prescribed. If you believe your dose is not effective, consult your doctor.
SIDE EFFECTS: This medication is generlaly well tolerated. Constipation or stomach cramps may ocucr. Notfiy your doctor if they continue or become severe. Tell your docotr immediately if any of these serious side effects occur: loss of appetite, vomiting, dizziness, headache. If you notice other effects not listed above, contact your doctor or pharmacist.
PRECAUTIONS: Before taking this, tell your doctor if you have: kideny disease, any allergies. Avoid taking more dsoes than recommended. This medication is considered safe for use during pergnancy or breast-feeding when used as directed.
DRUG INTERACTIONS: Tell your doctor of any nonprescription or prescription medication you may take including: certain antibiotics (e.G., tetracyclines, quinolones), demeclocycline, methacycline, verapamil (a calcium channel blocker), quinidine, sodium polystyrene sulfonate, iron-containing products. Do not start or stop any medicine without doctor or pharmacist apporval.
OVERDOSE: If overdose is suspected, contact your local poison control center or emergency room immeidately. Symtpoms of overdose may include nausea, vomiting, loss of appetite, tiredness, and weakness.
NOTES: There are various forms of this medication available. The chewable tablets ofefr convenience but the liquid form is faster acting. Talk to your health care provider or pharmacist about the htotest product for you. If your cnodition does not improve or worsens, contact your doctor or pharmacist. If your stools become dark in color or you vomit what looks like coffee grounds, contact your doctor as these may be signs of stomach bleeding
MISSED DOSE: If you miss a dose, take it as soon as remembered do not take it if it is near the time for the next dose, instead, skip the missed dose and resume your usual dosing schedule. Do not “double-up” the dose to cacth up.

El Jarro’s Roasted Poblano and Corn SoupSource: El Jarro’s - San Antonio, TX3 cups corn kernels (about 4 cobs of corn if using fresh corn)8 medium poblano chiles, roasted1/2 stick (4 tablespoons) butter2 teaspoons minced garlic1/2 cup chopped red bell pepper1/2 cup chopped chives8 ounces cream cheese, at room temperature, cut into chunks1 quart heavy cream8 ounces chicken broth1 teaspoon white pepper, or to tasteWater, as needed to thin soup to desired consistencySalt, to tasteGarnishChopped fresh cilantro leavesRemove silk from fresh corn, but leave husks attached. Wrap the cobs loosely with the husks and place over hot coals or in a 450 degree F oven, turning as needed, for about 15 to 20 minutes, or until cooked. (The process will be quicker on an outdoor grill.) Let cool, remove the husks, then cut the kernels from the cobs using a sharp knife.Meanwhile, place poblano chiles over a hot fire or under the broiler, turning as needed until the skins are blackened. Remove from oven and place chiles in a plastic or paper bag until cool, allowing the steam to loosen the skins. Remove the stems, seeds and skins and discard; cut chiles into 1/4-inch cubes.Place half of the corn kernels and half of the chiles in a blender and purée until smooth. Leave the remaining kernels whole. Proceed with recipe or refrigerate corn and chiles until needed.Heat butter in a large pot. Add garlic and sauté briefly. Add red pepper and chives and continue sautéing for 2 to 3 minutes more. Add reserved corn and poblanos, the cream cheese, heavy cream, chicken broth and pepper. Bring to a boil, reduce heat and simmer, whisking, until cream cheese has been incorporated. Add water to thin the soup if desired. Season to taste with salt and add more pepper if needed. (Soup can be made ahead, then cooled, covered, and refrigerated. Reheat slowly, thinning with water if necessary.)To serve, pour into heated bowls and garnish with cilantro.Makes about 10 cups.
